Peppernuts - Swedish style

Ingredients:

  • 100 gram stick margarine or butter, softened
  • 1/3 cup sugar
  • 1/2 tablespoon light corn syrup 
  • 1/2 egg
  • 1 teaspoon ground cardamom
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1 1/2 all purpose flour
  • 1 teaspoon baking soda
                                                                                           approximately 30 cookies
Method:

  1. Beat the butter, sugar and molasses until light and fluffy. Add the egg, beating well. Stir in the dry ingredients, kneading until smooth.
  2. Roll into balls and place on a greases or parchment-lined baking sheet. 
  3. Bake on the center oven rack for around 20 minutes.
  4. Peppernuts should be completely dry and brown.

*oven temperature : 175 C
