- 100 gram stick margarine or butter, softened
- 1/3 cup sugar
- 1/2 tablespoon light corn syrup
- 1/2 egg
- 1 teaspoon ground cardamom
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1 1/2 all purpose flour
- 1 teaspoon baking soda
Method:
- Beat the butter, sugar and molasses until light and fluffy. Add the egg, beating well. Stir in the dry ingredients, kneading until smooth.
- Roll into balls and place on a greases or parchment-lined baking sheet.
- Bake on the center oven rack for around 20 minutes.
- Peppernuts should be completely dry and brown.
